Recording samples via line in

How can I record samples using line in instead of it recording through the mic of the iPad or I phone

You get one of these:

This will allow you to record stereo
Or get one of these:

And you can record mono (left channel only) and use fx like ampkit or amplitube
For iPhone and iPad

Or you could get the Alesis i/o Dock. Altough its a more expensive option for some.
