Mixer: Better support for encoder/dial swiping

I find it difficult to turn a 100% encoder all the way down to 0% in a single swipe, if that encoder is located close to the bottom of the screen. For example in the mixer, there isn't enough space to do a full swipe of the Send2 control, and the encoder bottoms out at 45%. I have mainly noticed this in the mixer so far.

I am using an iPad Pro 12.9"
